So it's still February which means we need another snack! I love snap peas! They are great cooked or raw, but as a snack grab a handful of them raw & your favorite dip & you have a simple & delicious snack! How many more &s do you think I can fit into that sentence? :)

Grandma's Creation
Our snack of the day for today is a snack my grandma made for Christmas a few years ago. It is super simple, but everyone loves it. It is pepperoni with cream cheese, & it is as simple as it sounds. Spread a dollop of cream cheese onto a slice of pepperoni & fold it over like a tiny taco. Super simple & super yummy! I usually make this with an entire package of pepperoni & they still don't last very long. Enjoy your snack for today & I'll see you again tomorrow.

Pinwheels
Good morning! Todays snack food is pinwheels. My husband, Patrick, loves when I make these, they are much better than the ones you can get at Sams. The ingredients you need are:
10 Taco size tortillas
1 container garlic & herb cream cheese
4 green onions, chopped
2 cups shredded cheddar cheese
1 lb Tavern ham, or your favorite lunchmeat
Smear a tortilla with cream cheese then sprinkle with onions & cheddar cheese & lay the ham over the top. Starting at one end roll up the tortilla & wrap in saran wrap to hold together. Refrigerate & repeat with the remaining ingredients. After they are all completed unwrap the saran wrap & slice each wrap into 1/2 inch slices. These are great finger foods for parties or you can slice a few at a time & have them as a snack throughout the week.
Update: Elias is doing well! When he was born his eyes were still fused together. Tuesday he opened one eye, and they are expecting the other to open soon! He is also accepting food well, & they are continuing to up his feeding gradually. He is a fighter & will continue to progress. We appreciate your prayers!
Well Conner woke from his nap & wants lunch. I'll see you tomorrow.

Well as I'm writing this blog I'm still trying to think of the snack food of the day. Procrastination is one of my strong suits :) So how about if you tell me what you are snacking on today? Elias
Well I said I was going to give you a snack food a day, did one & then stopped. I do apologize, but I have news. Conner, the sweet little boy I watch, now has a brother!
Elias James was born 2-10-11, 14 weeks premature, 1 lb 12 oz. He is in NICU, but is doing well.
He is the cutest little guy, stole my heart at 1st glance. He has the tiniest little hands,

So I thought I would share this adorable guy with you, & ask that you keep him & his family in prayer while he gets strong enough to come home. I'll keep you updated on his progress.
And your snack food for today to keep in theme is baby carrots :) Very good dipped in semi-homemade ranch dip! All you need is a carton of sour cream & a pkg of ranch dip mix & enjoy.

National Snack Food Month
Well I know it's the middle of Feb, but I just found out that it is National Snack Food Month! So everyday for the rest of Feb I will be giving you a new snack food idea. So our 1st snack food idea will be chips & guacamole. Here is my personal recipe for guacamole which I have spoiled my husband with & now he says no other guacamole is as good.
Krystle's Guacamole
3 med sized avocados
1/2 small red onion, diced
1 lg jalapeño, seeded & diced
1/8 cup fresh cilantro, torn
2 roma tomatoes, chopped
2 Tbsp lime juice
3 tsp orange juice
salt to taste
Peel & pit the avocados, & smash in a bowl with a fork. Mix in the lime juice, orange juice, & salt. Next mix in the onion, jalapeño, cilantro, & tomato. Taste & add more salt or lime juice if needed. If you do not like your guacamole to spicy, try half a jalapeño at first & add more if desired. I enjoy this guacamole with Tostitos hint of lime chips, but it will be great with any of your favorite tortilla chips.
Enjoy your snack food this month!
